Description -Prepared by the esterification of polyglycerol with condensed castor oil fatty acids. In chocolate, compound chocolate and similar coatings, PGPR is mainly used with another emulsifier like lecithin to reduce viscosity.
Application – By improving the viscosity, it can improve the efficiency of chocolate coating processes: chocolate coatings with PGPR flow better around shapes of enrobed and dipped products in chocolate and food industry.
