Description – Propylene glycol fatty acid esters are lipophilic emulsifiers with specific crystalline properties. Production of propylene glycol fatty acid esters takes place via the esterification of propylene glycol with fatty acids, typically in the form of commercial stearic acid blends.
Application – PGMEs are often used in cakes and non-dairy whipped products. They help to achieve better volume, foam and stability in the e whipped cream. PGMEs can be used in combination with mono- and diglycerides to obtain excellent cake batter properties, resulting in increased cake volume and uniform structure. Apart from food, they are also extensively used in cosmetic industry.
