Description – Caseinates are produced by the neutralization of acid casein with alkali. It is a protein produced from skimmed milk and is readily soluble in water. Because of this and its other properties like emulsification, thickening and stability; it is widely used in food and beverage industry for products like desserts, whipped toppings, coffee creamers and cream soups.
Application – Because of its high calcium content, calcium caseinate is used in infant formula, sports nutrition products, dairy products, etc. The film forming property of caseinates is useful for coating vegetables and fruits as well as for sausage skins.
