Description – Hydrolyzed protein is derived from the hydrolysis of a protein into its component amino acids and peptides. Each protein hydrolysate is a complex mixture of peptides of varying chain length along with free amino acids. This is defined by a global value known as degree of hydrolysis (DH) that indicates the fraction of peptide bonds that have been cleaved in the starter protein. Application – Protein hydrolysates have been widely used for their nutritional, functional and bioactive activities that can be used in health care, such as antioxidant, antimicrobial, antihypertensive, immunostimulatory, antithrombotic, and antidiabetic activities. Although hydrolysates can be obtained from chemical hydrolysis, a controlled enzymatic hydrolysis, targeting specific peptide bonds, is the preferred method. They are also widely used in nutraceutical formulations, animal nutrition formulations and in agriculture.
